Guinness Irish Stew

We can't get enough of this stew on cold, winter nights! Amazing combination of flavors and the slight taste of Guinness just takes stew to a whole new level!

Ingredients

lbs stew meat
1 1/2
sea salt
1/2
tsp black pepper

tbl flour
2
tbl olive oil
1
medium onions, chopped
3
tsp thyme
2
brown sugar
12
ozs Guinness beer
1
cup red wine
28
ozs beef broth
12
ozs tomato paste
1
lb carrots
1
lb red potatoes
Directions
1.
Cut meat into 1" cubes. Toss in flour and heat in olive oil in large skillet until browned on all sides. Remove to another dish.
2.
Add onion, garlic, thyme, and sugar to skillet that you cooked beef in. Cook until onions are soft.
3.
Pour 1/2 the beer and all the wine into the skillet. Scrape the bottom to get browned bits mixed into liquid. Cook for 1-2 minutes.
4.
Add remaining beer, tomato paste, and broth to skillet. Next add stewing meat.
5.
Simmer for 30-60 minutes. While simmering cut carrots and potatoes into large bite size chunks.
6.
Add vegetables to skillet and simmer for at least one more hour.
7.
Serve and enjoy!
