Salmon En Croute

Careful not to burn the bottom!

Ingredients
1
lb salmon (cut into 3-4 portions)
1
box puff pastry
1
cup cream cheese
1/2
cup frozen spinach (or use Sara's spinach artichoke dip if available)
egg wash
Directions
1.
Knead puff pastry into a dough, then cut into equal squares large enough to cover each salmon portion.
2.
Remove moisture from spinach & Remove skin from salmon.
3.
Mix spinach & cream cheese in bowl. Spread cream cheese mix onto the top of each salmon portion.
4.
Wrap each salmon portion with pastry and seal with egg wash.
5.
Set oven to 400 and bake for 45 minutes or until golden brown.
