Eggplant Parmesan

Remember to chop the basil into smaller pieces than *you* think is necessary

Ingredients
1
large eggplant
1/2
cup grated Parmesan cheese
1
cup shredded mozzarella cheese
1
cup bread crumbs
1
cup marinara sauce
egg wash
1/2
cup flour
1/2
cup fresh basil
1
cup vegetable oil
Directions
1.
Preheat oven to 350 degrees.
2.
Peel eggplant, then slice width-wise into thin circles.
3.
Mix Parmesan with bread crumbs.
4.
Dredge eggplant into flour, then egg wash, then bread crumbs.
5.
Place eggplant into frying pan and fry in vegetable oil until lightly golden brown. Remove from frying pan and set aside.
6.
Pour some marinara on bottom of 6x12x2 baking dish and spread evenly.
7.
Place eggplant slices 2x4 in dish.
8.
Cover with mozzarella, basil, marinara (in that order), then repeat.
9.
Cover top with remaining mozzarella, then drizzle with olive oil.
10.
Bake 25 minutes.
