Asian Duck Salad

Crispy Duck Skin or GTFO

Ingredients
2
lbs duck
for dressing:
1
lemon (zest and juice)
1/4
cup olive oil
1
tbs sesame oil
1
tbs soy sauce
1
tsp brown sugar
1
clove grated garlic
1/4
cup fresh cilantro
1/4
cup chopped green onion
1
medium size, peeled butternut squash
1
cup baby spinach
Directions
1.
Roast duck in oven for 2 hours at 350 degrees (30 minutes per pound). You should be able to pull duck apart with fork when done.
2.
Combine ingredients for dressing.
3.
Rough chop butternut squash and roast in oven at 400 degrees for 20 minutes.
4.
Combine spinach, squash, shredded duck and dressing into salad.
5.
Top with leftover cilantro.
