Boeuf Bourguignon

Ingredients
1/4
cup chopped pancetta or bacon
2
lbs stew meat
2
cups red wine
2
cups beef broth
1
tbs tomato paste
3
cloves chopped garlic
1
bay leaf
Directions
1.
Cut bacon or pancetta into lardons and render fat in pan. Remove fat and lardons from pan.
2.
Set pan on medium high heat and when almost smoking, brown the stew meat on all sides.
3.
Deglaze with red wine then pour contents of pan into a pot.
4.
Add lardons and stew meat to pot.
5.
Add enough beef broth to almost cover meat. Add the rest of ingredients to pot and stir.
6.
Bring to simmer on top of stove. Bring heat to lowest level and cover pot with lid. Cook for 2 ½ to 3 hours or until beef is tender.
