Bacon Mac N Cheese

This is a real hit for special occasions!

Ingredients

box pasta
1/3
cup bread crumbs
1/3
lb bacon (diced)
3
tbs Italian parsley (chopped)
1
medium onion (diced)
2
cloves of garlic (diced)
1/2
tsp salt

tbs all-purpose flour
1
tbs Dijon mustard
1
sprig fresh thyme

cups whole milk
2
cups heavy cream
5
tbs butter, plus more to butter baking dish

cup grated Parmesan cheese
3/4
cup grated Gruyere cheese
1 1/2
cups grated Fontina
1/2
cup crumbled Blue Cheese
1
cup grated White Cheddar
(set aside some of the cheese to add to the bread crumbs for use on top at the end)
Directions
1.
Preheat oven to 450ºF and butter a 9”x13” glass baking dish.
2.
Bring a large pot of water to a boil (add some salt and oil). Cook pasta according to package directions. Drain and set aside.
3.
In a large Dutch oven or heavy pot, sauté the bacon until crisp. Remove bacon with a slotted spoon and reserve (leave the grease in).
4.
Sauté the onion and garlic in the bacon drippings until soft.
5.
Add the butter to the onion mixture and melt the butter, stirring with a wooden spoon.
6.
Using a whisk, add the flour a little at a time, and stir constantly until well mixed with the fat, making a roux.
7.
Whisk in the mustard.
8.
Gradually add the milk and cream a little at a time, whisking constantly.
9.
Add the thyme and salt.
10.
Let the mixture come to a simmer, and stir frequently for 15 minutes.
11.
Working quickly, mix in the Fontina, Blue Cheese, Gruyere, White Cheddar, Parmesan, bacon, and parsley. Continue to stir until all cheese is melted.
12.
Add the cooked pasta to the cheese mixture to coat.
13.
Add the finished mixture to the prepared baking dish.
14.
Mix the remaining cheese and breadcrumbs together and sprinkle on top of the finished mixture.
15.
Bake for about 15 to 20 minutes or until bubbling and golden brown. Remove from oven when done and rest for 5 minutes to thicken.
