Preheat oven to 425 degrees
In a large bowl, toss sweet potatoes with canola oil and season heavily with salt and pepper, making sure all the potatoes are coated with oil. Pour potatoes out onto a sheet tray, spreading potatoes out evenly and place in the oven.

Roast potatoes for roughly 15 minutes, stirring potatoes every so often. When a fork is inserted and slides out without force, sprinkle brown sugar and thyme sprigs over potatoes and toss together.

Place potatoes back in the oven for about 6 minutes to let the sugar caramelize and become crispy around the edges. Serve hot and enjoy.
