Chicken Noodle Soup With Gluten Free Egg Noodles

Declared the "best chicken noodle soup ever"! I make a lot of different soups, but this one is the most loved chicken soup recipe by every member of my family. Flavorful and healthy!

Ingredients
2
medium onions, diced
2
garlic, minced
3
Tbl olive oil
3
qts qts chicken stock or broth
3
bay leaves
3
tsp tsp thyme
3
tsp tsp basil
3
tsp tsp oregano
2
chicken, breasts or tenders
3
diced carrots
2
tsp tsp salt (or to taste)
1
tsp tsp pepper
EGG NOODLES
3
eggs plus 1 yolk
1
tsp tsp salt
1
water (or slightly more, if needed)

cups cups gluten free flour blend with xantham added
ROUX FOR CREAMY SOUP (if desired)

Tbl melted butter
2
Tbl gluten free flour mix

cup cup milk (1/2 x 1/2, or almond, coconut work fine too)
Directions
1.
Saute onions and garlic in olive oil in a large stock pot until tender.
2.
Add remaining soup ingredients to pot and bring to a boil. Keep at a low boil for 1 hour.
3.
While chicken is simmering, mix the first three egg noodle ingredients until mixed thoroughly.
4.
Add gluten free flour to egg noodle ingredients and stir with a fork until a stiff dough forms. Add water, if needed.
5.
Turn dough out onto floured surface and knead a few minutes, until smooth.
6.
Roll dough out to about 1/8" thickness, or desired noodle thickness. Keep surface of counter and top of dough well floured.
7.
Using a pizza cutter, cut dough into 2 1/2" x 1/2" noodle strips.
8.
Dust noodles with flour so they don't stick together and put in a large bowl until soup is done simmering.
9.
Add noodles to soup making sure they do not stick together. It is best if they are added individually, but quickly. Keep noodles at a low boil for 13-15 minutes, stirring frequently so they do not stick to the bottom of the pan.
10.
If a slightly creamy soup is desired, make a roux by melting butter in a small skillet and adding flour, whisking until smooth.
11.
Whisk milk into butter/flour mixture and whisk over low heat until it starts to thicken.
12.
Add roux to soup and noodles and stir until the broth begins to thicken.
13.
Serve and enjoy!
