Chicken Piccata

Chicken Piccata is one of our favorite dishes and it's so much easier to make than you'd imagine! Delicious served with buttery noodles!

Ingredients
2
lbs chicken breasts or chicken tenders
Sea salt and black pepper
All purpose flour

Tbl butter
4
Tbl olive oil
1/3
cup lemon juice
1/2
cup chicken stock
3/4
cup capers, rinsed
1/3
cup fresh parsley or about 3 Tbl dried parsley
Directions
1.
Season chicken with salt and pepper, then coat all sides with flour.

In a large skillet over medium high heat, melt 2 Tbls butter with 2 Tbl olive oil. When it starts to sizzle, add 1/2 of the chicken pieces and cook on each side for 3-4 minutes, until lightly browned. Remove chicken to a plate and repeat again with butter and olive oil and chicken until all the pieces are browned.

Once all chicken is cooked and removed from skillet, add the lemon juice, stock, and capers, scraping the bottom of the pan to get all the browned bits mixed in. Bring to a boil

Add chicken back in to pan and simmer for 5 minutes in liquid. Remove chicken from pan.

Add remaining 2 Tbl butter to liquid in pan and whisk until smooth. If you want the sauce to be thicker, add 1-2 tsp of flour and whisk until smooth and slightly thickened.
6.
Pour sauce over chicken and garnish with parsley.
