Best Ever Gluten Free Pizza Crust

We love pizza! We like it thin and crispy and we want it to hold up to lots of toppings! Our favorite pizza crust, and you can't even tell it's gluten free! Fabulous with a garlic white sauce!

Ingredients

cups gluten free multipurpose flour, or brown rice flour blend (recipe below)

tbl nonfat dry milk powder

tsp baking powder
3/4
tsp salt
1
tsp xantham gum
1 1/2
tsp tsp instant yeast
1
tbl honey or sugar
1
cup warm water
2
tbl olive oil (for dough)
2
tbl olive oil (for pan)
BROWN RICE FLOUR BLEND (will have enough blend to store for later use)

cups brown rice flour
2
cups potato starch
1
cup tapioca flour or starch
Directions
1.
Place the first 5 ingredients in a large stand mixing bowl. Mix until thoroughly blended.
2.
Place the honey, warm water, olive oil, yeast, and 1/2 cup of dry mixture into small bowl. Stir and set aside for 30 minutes, until bubbly.
3.
Add honey mixture to dry ingredients in stand mixer and beat on medium-high for 4 minutes.
4.
Cover the bowl and let dough rest for 30 minutes.
5.
Preheat oven to 425 degrees.
6.
Drizzle 2 Tbl oil onto center of baking sheet or pizza pan.
7.
Scrape dough into center of pan onto oil. Press with moistened fingertips and work outward until you have a 12-14" circle of dough.
8.
Let dough rest, uncovered, for 15 minutes.
9.
Bake the crust for 8 to 10 minutes.
10.
Top the crust with any toppings you desire. Return to over and bake for 10-15 minutes, until done.
11.
*The resting periods for dough can be shortened without too much effect on final crust.
