Vegan Coco Oat Chocolate Chip Cookies

Enjoy these thick, chunky and hearty vegan gluten-free seasonal cookies on a cold night.

Ingredients

cup Gluten Free Flour
1/2
cup Gluten Free Oats
1/4
cup Brown Sugar
2
tbsp Local honey
1/2
cup unsweetened shredded coconut
2
tbsp sunflower seed butter
1
tsp vanilla extract
1
tsp cinnamon
1
tbsp baking soda
1/4
cup bourbon
1/4
cup chia seed flour
1/4
cup water
1/4
cup dark chocolate chips (vegan)
Directions
1.
Combine the dry ingredients in a medium sized bowl (except the chocolate chips).
2.
Add the honey, sunflower seed butter, vanilla extract, water, and bourbon and mix until the dough is thick and creamy.
3.
Fold in the chocolate chips.
4.
Place the dough into 2 inch sized balls onto a cookie sheet, and place the sheet into a pre-heated 325 degree oven.
5.
Bake between 8-12 minutes depending on consistency preferences.
6.
Let cool 10 minutes before serving.
