Potato Leek Soup

A classic dish by the incredible Julia Child.

Ingredients
4
cups leeks, washed and sliced
4
cups russet potatoes, diced
7
cups water
2
tsp salt
2
tsp pepper
1/2
cup heavy cream or creme fraiche (optional)
2
tbsp parsley
Directions
1.
Bring potatoes, leeks and water to boil in a large stock pot. Simmer for 30 minutes or until the potatoes are fork tender.
2.
Remove vegetables from water with slotted spoon and save water. With a food mill or an emersion blender, puree vegetables. Return to water and season with salt and pepper. Whisk in cream if desired. Finish with parsley.
