Preheat oven to 350 degrees Fahrenheit. Halve zucchinis length-wise and scoop out seeds and some of the flesh with a spoon. Brush with 1 tbsp olive oil and season with salt and pepper. Place on tinfoil-lined baking sheet and place in oven. Bake for 10 - 15 minutes, until just tender.

While zucchinis are baking, sauté the rest of the vegetables in the remaining olive oil until vegetables are tender. Season with salt and pepper. Mix vegetables with breadcrumbs, parmesan cheese and basil.

Remove zucchini from the oven. Fill zucchini with vegetable mix and top with additional parmesan cheese. Place back in oven and back until cheese is browned, about 15 minutes.
