Fettucine With Quick Meat Sauce

This is hands down one of my favorite meat sauce to make because of the incredible flavor packed in just 30 minutes of cooking. You can serve this sauce with any type of pasta you desire.

Ingredients

lb Fettuccine

tsp Extra-virgin olive oil
1
ea. Onion, large and finely chopped
1
ea. Carrot, large and finely chopped
1
stalk Celery, large and finely chopped
4
ea. Garlic clove, minced
1
tbsp Italian seasoning
1
lb Lean (90% or leaner) ground beef
1
ea. 28-oz. Can crushed tomatoes
1
/4 c. Chopped flat-leaf parsley
1
/2 tsp. Salt
1
/2 c. Parmesan cheese, grated
Directions

In a large pot bring water to a boil. Cook pasta until just tender (al dente), 8 to 10 minutes or according to package directions. Drain but save a cup of the pasta water.

Meanwhile, heat oil in a large skillet over medium heat. Add onion, carrot and celery and cook, stirring occasionally, until the onion is beginning to brown, 5 to 8 minutes.

In the same skillet, stir in garlic and Italian seasoning; cook until fragrant, about 30 seconds. Add beef and cook, stirring and breaking up with a spoon, until no longer pink, 3 to 5 minutes. Increase heat to high. Stir in tomatoes and cook until thickened, 4 to 6 minutes. Stir in parsley and salt.

Add pasta back into the pan, and heat through with sauce (add pasta water if needed). Sprinkle in cheese with pasta.
