Double Bean Burgers With Avocado Basil Cream

Easy veggie burgers with a guac' filling that can serve up to six people!

Ingredients

can Black beans, drained and rinsed
1
can Cannellini beans, dried and rinsed
1
Large egg
1
Egg white, lightly beaten
1/2
cup Panko bread crumbs
3
tbs Olive oil
3
tbs Cilantro, chopped
4
Garlic cloves, minced
1/2
tsp Smoked paprika
1/2
tsp Onion powder
1/2
tsp Salt
1/2
tsp Pepper

Whole grain buns, toasted

cup Sour cream
1
Avocado, chopped

Medium basil leaves, chopped
Directions
1.
In a large bowl, mash beans with potato masher or fork. Add cilantro, garlic, paprika, onion powder, 1/4 salt and pepper, mixing to combine.

In a smaller bowl, lightly beat eggs, and add in 1 tbs olive oil and panko, stirring to mix.
3.
Add egg mixture to the beans, and mix thoroughly to combine, bringing it together with your hands if needed.
4.
In a food processor, add basil and avocado, blending to combine. Once somewhat smooth, add in sour cream, blending again until combined. Add 1/4 salt and pepper.
5.
Separate the beans into 6 equal patties.
6.
Heat a large skillet over medium-high heat and add one tbsp. olive oil. Add burgers and cook each side until golden for about five minutes.
7.
Remove and serve with avocado cream.
