Cauliflower Sausage Casserole

This is a great tasting low carb dish. Its perfect for lunches or dinner. Be sure to make extra for leftovers :)

Ingredients
1
lb sage breakfast sausage
1
can condensed cream of chicken soup
1/3
cup heavy whipping cream
1/4
cup water
2
tsp dried onion, minced
1/2
tsp salt
1/4
tsp black pepper
1
sprinkle of red pepper flakes
1
head cauliflower, finely chopped
1 1/2
cups shredded Cheddar cheese
Directions
1.
Preheat oven to 350 degrees. Lightly spray a 1.5 quart casserole dish with non-stick spray.
2.
Brown sausage in a large skillet and drain grease. Whisk together the soup, heavy whipping cream, water, onion, salt and pepper in a medium sized bowl.
3.
Place chopped cauliflower in bottom of casserole dish. Top with sausage and then top with soup mixture. Cover with foil and bake for 1 hour. Remove foil and top with cheese. Return to oven without the foil, for 5 minutes to melt cheese and serve.
