Slow Cooker Savory Pot Roast

I like to make this hearty meal for days when I will be out of the house all day and having this ready when I get home is a real treat. The smell alone is devine!

Ingredients
1
can Cream of Mushroom Soup
1
can French Style Green Beans
1
dry onion soup and recipe mix
6
small red potatoes, halved
1
lb boneless beef bottom round roast or chuck pot roast
1/2
baby pre-cut carrots
2
celery, chopped (optional)
1
medium yellow or white onion, quartered or sliced
1
cup of water or beef broth
salt and pepper
Directions
1.
Layer sliced onions on the bottom of slow cooker, followed by carrots and celery
2.
Salt and pepper the beef roast on both sides and sear both sides on med/high heat for 30 minutes each (to lock in juices) and place on top of the vegetables in slow cooker.
3.
Stir the soup, onion soup mix and beef broth or water together and pour over beef.
4.
Add french style green beans and red potatoes around the edges of the beef.
5.
Cover and cook on LOW for 8 to 9 hours* or until the beef is fork-tender.
6.
You may also had flour or cornstarch to the liquid to thicken the gravy
