Garlic Roasted Potatoes

These potatoes are easy and delicious as a side dish for any course. The secret to getting these potatoes crispy is to not to overcrowd them on a baking sheet.

Ingredients

lb Small red or white potatoes

/4 c. Good olive oil
1 1/2
tsp Kosher salt
1
tsp Freshly ground black pepper
2
tbsp Minced garlic (about 6 cloves)
2
tbsp Parsley, finely chopped
Directions
1.
Preheat oven to 400 degrees F.

Cut each of the potatoes in half or quarters and toss in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated.
3.
Transfer the potatoes to a sheet pan and spread out into 1 layer, (discard excess oil, if any).
4.
Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
5.
Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.
