Peppermint Meringue Kisses

These cute little peppermint kisses are great to give away as holiday party favors or just eaten as a guilt free egg-white based sweet snack.

ea. Large egg white, room temperature
1 1/4
cups Superfine sugar
1
/4 tsp. Peppermint extract
1
/4 c. Finely chopped peppermint hard candy
Directions

Preheat the oven to 275 degrees. Bring about 2-3 inches of water to a simmer in a pot about the same width as the mixer bowl.

n the bowl of an electric stand mixer, combine the egg whites, sugar and peppermint extract. Place the bowl snugly over a pot of barely simmering water, and stir until the sugar has mostly dissolved. Move the bowl to the mixer fitted with a whisk attachment, and whisk on medium-high speed until stiff, glossy peaks have formed, about 6-7 minutes. Turn the mixer to low speed, and drop in the peppermint candy, whisking until it has spread throughout the egg white mixture.

Spoon the meringue into a piping bag fitted with a medium round tip, and pipe 1 1/2- to 2-inch kisses onto a parchment-lined baking sheet. Bake for about 45-50 minutes, or until the meringues feel dry and are just beginning to color on the outside

Serve immediately, or cool to room temperature, then freeze on a baking sheet for 30 minutes or until firm. Transfer to a hard plastic container, arranging in single layers between sheets of parchment. Cover tightly and freeze.
