Raspberry Brie Frilled Waffles

Ingredients
the waffles

cup Almond Flour

tbs Flaxseed Meal
1/3
cup Coconut Milk
1
tsp Vanilla Extract

tsp Baking Powder

large eggs

tbs Swerve
7
drops liquid stevia
the filling
1/2
cup Raspberries
zest of 1/2 lemon
1
tbs Lemon Juice
2
tbs Butter
1
tbs Swerve
3
oz Double Cream Brie
Directions
1.
Directions: Mix together all waffle ingredients and then cook on a waffle iron. Lay slices of brie cheese across the warm waffles. In a separate pan heat butter and swerve, once browning add raspberries and lemon juices. Cook until bubbling and jam-like. Place waffle sides with brie under a broiler until brie is soft and waffle is slightly crisp. Assemble waffle with brie and raspberry compote. “Grill” in a pan over medium heat for 1-2 minutes per side.

P.S. could ditch the Jam part and just make some waffles and top with peanut butter and some Walden Farms Pancake Syrup.
