5 Cheese Macaroni And Cheese

This is my favorite recipe from my mother. It isn't for everyday, but its definitely a treat when she makes it!

Ingredients
1
box elbow macaroni, cooked and chilled
2
cans evaporated milk
2
eggs
2
tbls mayo
2
blocks extra sharp cheddar cheese, grated
2
blocks extra, extra sharp cheddar cheese, grated
1
block havarti cheese, grated
1
block gouda cheese, grated
1
ball mozarella cheese, grated
Directions
1.
Shred 1 block of extra sharp, 1 block of extra extra sharp and the remaining cheeses and set aside. (bowl #1)
2.
Shred remaining ratio of extra sharp and sharp cheddar cheese and set aside. (bowl #2) You should have 2 separate bowls of shredded cheese.

Cook macaroni according to the instructions on the box, drain, and cool completely. Macaroni must be cold, and transfered to a large bowl. Season with salt and pepper to taste and mix in 2 eggs to the macaroni and set aside.

In a large saucepan over a medium to low flame, add evaporated milk but do not let milk boil. When the milk is hot, gradually whisk in bowl #2 of the cheeses until completely melted.

Place macaroni is a deep large oven safe baking dishes leaving 2-4inches of room at the top. Add 2T. of mayo to macaroni,stir and pour melted cheese sauce over macaroni, stirring evenly. Do not pour cheese sauce to the top, this dish expands in the oven.
6.
Sprinkle bowl #1 of shredded cheeses completely over the baking dishes filled with macaroni evenly, and place in a 375 degree oven until cheese is melted and bubbling.
