tsp instant yeast (1 packet), also called rapid rise or bread machine yeast
1 1/4
cups water, room temperature
3
tbsp unsalted butter, melted
2
tsp olive oil
Directions
1.
Combine the flour, cornmeal, salt, sugar, and yeast in a bowl.
2.
Add the water and melted butter and continue mixing fully incorporated, 1-2 minutes. Knead until the dough is glossy and smooth and polls away from the sides of the bowl; 4-5 minutes.
3.
Spray a separate bowl with cooking spray. Transfer the dough to the bowl, turn to coat with oil. Cover tightly with plastic wrap and let rise at room temperature until doubled, about 60 minutes.
4.
After an hour, turn the dough out onto a dry work surface. Divide the dough into two pieces. Roll each piece into a 12x12 circle, about ¼ inch thick.
5.
Place one circle into a deep dish pizza stone or a 9 inch spring form pan. Fill with desired toppings.
6.
Place second dough circle on top and press the edges together to seal. Prick the top of the dough with a fork.
7.
Bake in a pre heated 400 degrees for 10 minutes. Remove from oven and top the top of the pizza with sauce. Return to oven for an additional 20 minutes.
8.
Remove from oven and allow to rest for 10 minutes before serving.
