Scones From Scratch!

Ingredients

cups All-Purpose Flour
1/3
cup Sugar

tsp Baking Powder
1/4
tsp Baking Soda
1/2
tsp Salt

tbsp Unsalted Butter
1/2
cup Sour Cream
1

Directions
1.
Combine flour, sugar, baking powder, baking soda and salt with a leavener.
2.
Whisk them together in a large bowl, then add some cold butter. Cut in the butter just enough so you can still see little chunks of butter, being careful not to over-mix. (As the scones bake, those bits of butter will melt into the scones and the steam will give the pastry layers as the butterfat lends richness.)
3.
As soon as the butter is added, stir any sweet or savory flavorings (see flavoring options below) into the crumbly mix. Stir in sour cream and egg to bind.

Work the dough gently, pressing and kneading a few times, just until it comes together. (The trick is to have a delicate touch, or your tender scones will toughen.)
5.
Cut the dough into wedges or rounds and bake for 25-30 minutes until puffed and lightly golden. (While biscuits are best served fresh out of the oven, scones can be baked ahead of time.)
6.
CURRANT-FLAVORED SCONES: A) Add 1/2 cups of dried currants; B) Consider soaking them in a little fruit juice or liquor (Grand Marnier is wonderful)

GINGER SCONES: A) Add 2 tablespoons of grated ginger to give a nice tang.
8.
JALAPENO-CHEDDAR SCONES: A) Roast, peel, seed and chop 2 jalapenos (or more); B) Add them to the dry ingredients along with 1 cup of grated cheddar cheese
9.
CHIVE-PARMESAN SCONES: A) Add 1/2 cup of chopped fresh chives to the dry ingredients along with 1 cup of grated Parmesan; B) Form the scones, then spring a little more cheese over scones right before baking.
10.
PROSCIUTTO-SWISS: Chop 4 oz. sliced prosciutto and add the dry ingredients along with 1 cup of grated Swiss cheese.
11.
CHOCOLATE CHIP SCONES: A) Add 1 2/3 cups of chocolate; B) Fold in semisweet or bittersweet chocolate chips; C) Optional, fold in chips with some nuts or a little orange zest, as desired.
