Buffalo Chicken Dip

You can add more buffalo sauce for a spicier version, or omit or reduce cream cheese for a lighter version. This is the original, crowd friendly variation!

8oz block cream cheese

cup buffalo wing sauce (Frank's)
i cup ranch dressing (hidden valley)
1
cup shredded cheddar cheese

chicken breasts- either from a rotisserie chicken, or poached (see directions below)
Directions

Poached Chicken:

Place two chicken breasts in pot of water. Bring to boil. Let boil for 30-40 minutes, depending on size of breasts. Optional: add a tablespoon of zesty Italian dressing to boiling water for extra flavor.

Buffalo Chicken Dip:

Shred the cooled, poached chicken or the rotisserie chicken with your hands or two forks. Add the softened cream cheese, ranch, and wing sauce. Mix thoroughly. Spread the mixture into the bottom of an 8 x 8 or similar size pan. Cover with shredded cheese. Bake at 350 degrees for 30 minutes.

As a variation, you can make chicken buffalo rollups, using flour tortillas stuffed with the dip mixture.
