Chicken And Barley Soup

Mom's best soup!

Ingredients

tsp olive oil
1
medium onion, diced
2
carrots, diced
3
celery stalks, diced
32
oz Low-sodium, fat-free chicken broth
1
sprig fresh thyme
2
bay leaves
1/2
tsp salt
1/2
tsp ground black pepper
1
cup cooked barley
2
cup cooked shredded chicken
Directions
1.
Add oil to a soup pot over medium heat.
2.
Add in the onion, carrots and celery, saute for 5 minutes
3.
Add broth, thyme, bay leaves, salt and papper. Bring to a boil, then reduce heat to a simmer
4.
Cover and cook for 20 minutes
5.
Remove bay leaves and thyme stem
6.
Add barley and chicken, heat through for 2-3 minutes
