Stuffed Tomatoes With Breadcrumbs

This vegetarian-friendly size dish is one of my all-time favorites and great as an appetizer or snack. Can be made vegan by substituting vegan cheese.

Ingredients

beefsteak tomatoes
1/3
cup olive oil
1/3
cup chopped fresh basil
1
clove garlic, minced
1/2
cup fresh Parmesan or Pecorino Romano cheese
1
cup bread crumbs, dry or fresh
1
pinch salt and freshly ground pepper

tbsp olive oil
Directions
1.
Preheat oven to 350 degrees. Wash tomatoes and pat dry. Cut tomatoes in half and remove seeds. Drain upside down on paper towels and set aside.

For stuffing, combine olive oil, basil, garlic, cheese, bread crumbs, salt and pepper. Divide the stuffing between the tomato halves. Place tomatoes in a 9 x 13 inch baking pan. Drizzle 2 tablespoons olive oil on the tops of the tomatoes.
