Spicy Red Pepper Couscous With Zesty Avocado Relish

Ingredients

tsp vegetable oil
2
green onions, chopped
1
red pepper
1
garlic clove, minced
2
tomatoes, chopped
1
small or medium zucchini, diced
1
cup cooked chickpeas
1
cup boiling water
1
cup couscous
1/4
tsp cayenne
1/2
tsp ginger
1/4
tsp salt
1/2
tsp curry powder
1
tsp ground cumin
2
tbsp fresh parsley
1/8
tsp ground cinnamon
4
roma tomatoes, seeded and chopped
1
avocado, peeled and diced (discard pit)
1/4
cup red onion, chopped fine
3
tbsp fresh cilantro, chopped
2
tbsp extra virgin olive oil
1/2
tbsp lime zest
1
tbsp fresh lime juice
Directions
1.
In a medium-size skillet heat the oil. Add green onions, sweet pepper, garlic, tomatoes and zucchini. Saute for 5 min, stirring gently.
2.
Remove from heat and keep warm. In a medium-size saucepan, combine the remaining ingredients, mix, cover and let stand 5 minutes, or until liquid is fully absorbed.
3.
Add the first mixture and fluff with a fork.
4.
For relish, combine chopped avocado, tomato, onion, cilantro, and lime zest in a separate bowl.
5.
Whisk together lime juice and oil and drizzle over salsa. Serve alongside warm couscous.
