Carmelized Onion & Tomato Tarts

Perfect for entertaining, caramelized onion and tomato tarts are sure to please! Serve immediately.

Ingredients
4
medium sized onions
cherry or grape tomatoes (any color)
4
oz goat cheese (can substitute with feta cheese)
1
puff pastry sheet (thawed, but still cold)

tbs butter and 1 tablespoon olive oil
1/2
tsp sugar
salt & pepper to taste
Directions
1.
Thinly slice onions and add to pan with butter and oil on medium heat
2.
Add sugar and salt & pepper, stirring every few minutes (if the temperature is too high lower slightly)
3.
Continue to cook until onions are caramelized, brown, soft and broken-down (about 30-40 minutes)
4.
Preheat oven to 350
5.
Meanwhile, slide tomatoes in half and season with salt and pepper
6.
Once onions are removed from heat and cooling, slice puff pastry until 10-12 squares (Note: Can cut circles if preferred, but will yield less servings)
7.
With a fork, gently press down on the puff pastry making a border around the tart (leaving the middle for the filling and the small border to rise and puff up)
8.
Add onions to the middle of the tarts (use as much as desired)
9.
Add some of the sliced tomatoes to the middle of the tarts (use as much as desired)
10.
Add the cheese to the middle of the tarts (use as much as desired)
11.
Lightly drizzle a little olive oil over the top of the tarts
12.
Bake for about 30 minutes or until the tarts are golden and the bottoms are cooked
13.
Serve Immediately
