Whipped Feta Brushetta

Easy appetizer perfect for entertaining. Steps can be prepared in advance (cheese mixture would need to be room temp before assembling) and then put together when serving.

Ingredients
2
package of grape or cherry tomatoes (I prefer to buy two different colors when available)
6
oz feta cheese
2
oz cream cheese, room temperature
2
tbs parmesan cheese
2
tbs lemon juice
1/3
cup olive oil
salt and pepper
2
tbs minced shallots
2
tbs minced garlic
1
tbs champagne vinegar
1
tbs balsamic vinegar
2
tbs basil leaves, chopped (optional)
2
french baguettes, sliced and toasted (unless the bread is really large)
Directions
1.
Heat the oven to 400 degrees.
2.
Slice the baguettes into ½" thick slices and place on a baking sheet
3.
Drizzle with olive oil, salt and pepper and place in the oven for 5 minutes.
4.
Turn and bake another 3-4 minutes until brown on the other side.
5.
Take out of the oven and let cool.
6.
Chop the tomatoes into bite sized pieces, then add the vinegars, garlic, shallots, salt and pepper to taste and basil leaves.
7.
Place in the refrigerator for a half an hour to chill (can stand up to a few hours).
8.
While the tomatoes are in the fridge, put the feta and the parmesan cheeses in a food processor.
9.
Pulse a few times, then add the lemon juice and olive oil, salt and pepper to taste.
10.
Take the toasted baguette and top with the whipped feta.
11.
Then top with a mound of the tomatoes.
12.
Repeat with all the toasts and serve on a platter.
