Potato Soup

This is the soup even mom loves! Nothing else to say, just make it.

Serves 6people
Ingredients

large potatoes (gold if available), peeled and diced
2
carrots (peeled and diced)
1
bunch of leeks (slice lengthwise then chop and put in a bowl of water to get the sand out. Pull the pieces apart while in water and set aside (leaving sand at bottom of bowl)

slices of lean bacon, chopped
1
box container of chicken stock (I prefer organic)
1
small container heavy cream (can use milk to make lighter)
1
tsp garlic powder (or 3 cloves fresh garlic)
salt and pepper
cheddar cheese for topping
scallions for topping
Directions
1.
Brown bacon in the soup pot til crisp.
2.
Meanwhile, peel and chop potatoes and carrots. Chop and wash leeks.
3.
Remove bacon and set aside. Add veggies, salt and pepper and garlic powder. Stir.
4.
Then add chicken stock, bring to a boil. Cover and simmer for 30 minutes.
5.
Using a blender or a hand blender (I prefer hand blender) blend the soup til creamy. Add cream or milk to desired consistency (about 1/4 cup).
6.
Top with bacon, your favorite cheddar cheese and scallions.
