Sour Cream Chocolate Cake

Passed down in the family, this cake is easy yet impressive. Can make chocolate peanut butter icing or any other icing flavor you desire.

Ingredients

cup flour

cup sugar

cup water

cup sour cream
1/4
cup shortening
1 1/4
tsp baking soda
1
tsp vanilla
1/2
tea baking powder
2
eggs (large, not extra large)

tsp salt

cup cocoa (baking aisle)
frosting
1
stick unsalted butter, softened
1
lb confectioners sugar
1
tsp vanilla
1/4
cup cocoa
1/2
cup peanut butter (creamy)
Directions
1.
Preheat oven to 350.
2.
Sift dry ingredients (sifting is important to keep cake light)
3.
Mix wet ingredients together.
4.
Add dry ingredients to wet ingredients and mix on low with a hand mixer for 30 seconds and then high for 3 minutes.
5.
Use Crisco baking spray with flour (pam sells it) on 2 9 inch baking pans. Spray pans very well.
6.
Pour batter in evenly and bake for 30-35 minutes.
7.
DO NOT open the oven door for at least 30 minutes.
8.
Test doneness by putting the end of a sharp knife /tooth pick in the middle to see if comes up clear.
9.
Cool and remove from pans.
10.
For the Frosting: Beat all ingredients together and add a few drops of milk to thin out (but be careful to only add a little milk at a time). Taste to see if you need more peanut butter.
11.
Frost layers of cake and top / sides of cake.
