Potatoes And Cheese

Technically these potatoes aren't a full meal, but they are a staple at our holiday gatherings. This is amazing next to a ham or lemon chicken.

Ingredients
2.5
lbs of potatoes (which will yield leftovers)
4
ozs sour cream
5
tbs of butter, plus more for top
8
-10 slices of american cheese
salt and pepper
Directions
1.
Peel and cube the potatoes and put them in cold water and turn the heat up to high to bring to a boil.
2.
Once boiling, add salt to the water and turn the heat down slightly (to avoid the water to overflow).
3.
Cook until tender (about 15 minutes or so).
4.
Drain the potatoes and put them back in the same pot.
5.
Add 5 tablespoons of butter, the sour cream and 2-3 slices of American cheese. With a hand mixer, blend the potatoes.
6.
Assess the taste and consistency (add more salt and pepper, as desired as well as sour cream). Note: You don't want them too runny because they will thin out as they bake.
7.
Pour into a baking safe dish.
8.
Take the American cheese and push it into the mashed potatoes with two fingers (creating a sunk-in hole in the middle of the cheese). Continue with cheese all over top.
9.
With a spoon, smooth out the top of the potatoes so you cannot see the cheese.
10.
Cut small pieces of butter and arrange on top of the potatoes (here and there)
11.
Bake on 400 for about 45 minutes or until top is golden brown and potatoes are bubbly. You want to see a nice golden crust here.
