Chocolate Bark

Ingredients
1
17.5 ounce bar of of semi-sweet chocolate. (i use the trader joe's pound plus bar. you can use any good belgium chocolate or giardelli's from california. be careful - nestle is now from mexico)

cup dried cranberries
1
cup salted and dry roasted pistachios (about 8oz. in shells)
Directions
1.
Prepare jelly roll pan with non-stick foil or regular foil.
2.
In a saucepan, place 1 tsp. vegetable oil. Break up the chocolate, add and melt on very low heat. I have a stainless steel inter clad cookware which does this well. Just be careful the chocolate does not burn.
3.
When the chocolate is melted, remove from the heat and add 2/3 cup of the cranberries and pistachios. Mix well.
4.
Working quickly, place the chocolate mixture on the foil spreading to cover. I use a metal spatula.
5.
Next, press the remaining cranberries and nuts into the warm chocolate mixture.
6.
Place tray in the freezer for about 30 minutes.
7.
Remove; put on some throw away plastic gloves, and break up the chocolate.
8.
Then package as desired.
