Nu Le’S Vietnamese Egg Rolls (Cha Gio)

Ingredients
5
package egg roll wrappers (25 in a package)
1
pack of vermelli noodles (see instructions on packaging) cut them to 2-3 inches after soaking
4
lb ground pork (makes about 125 egg rolls)
3
jumbo carrots – shredded – 2-3 inches long to fit in wrappers
2
medium sweet potatoes – shredded – 2-3 inches long to fit in wrappers
1
large yellow onion chopped
2
bundles green onions – cut small

tbs salt
1/4
tbs pepper
mix all the ingredients except the wrappers

Mix all the ingredients except the wrappers

Defrost the eggroll wrappers by leaving them out for an hour or less. Check to see if the package is soft, once soft then they are ready to peel and roll. Note: do not peel the wrappers until you are ready to roll. The wrappers will get hard if you leave them out to long.

Wrapping - Divide Filling For Uniform Rolls

Take a wrapper and place it so one corner points to you (so you’re looking at a diamond shape). Fold the bottom corner up 2/3 of the way towards the top

Place the egg roll mixture across the bottom leaving a 1/4? gap between the meat and the bottom edge of the wrapper. The filling should not go over the edges where we have folded up the triangle shape. This ensures a double wall of wrapper so the filling does not leak out into the fry oil and burn

Fold the left corner over about 2/3 of the way, repeat on the right

Roll up and keep it tight as you roll your first layer, closing off the filling. This first revolution determines how tight the roll will be.
8.
As you reach the top, seal with egg whites at the top corner of the wrapper and finish rolling. This will seal the roll.
9.
Deep fry at 375-400 degrees till they turn brown. It will usually take around 12-16 minutes per batch.
