Creamy One Pot Mac & Cheese

Ingredients
8
oz cavatappi or other short pasta
1
head cauliflower (about 1.5 lbs) cut into small florets, stalks chopped
1/4
cup milk (1 or 2%)
6
oz grated sharp cheddar cheese
1/4
cup parmesan (1oz)
1/2
cup low fat sour cream
2
scallions, very thinly sliced, black pepper
(green salad to serve on side)
Directions
1.
Bring large pot of water to boil, leaving a 3-in space between water and top of pot. Cook pasta according to package direction, add the cauliflower during the last 4 minutes of cooking.
2.
Reserve 1/2 C. cooking liquid, drain pasta and cauliflower and return to pot.

While the pasta is cooking, combine the milk, cheddar and part in a large heatproof bowl and place over the pot of bubbling pasta water (it is okay if the bowl touches the water.)
4.
Stir occasionally until the cheese melts. Remove from heat and mix in sour cream.
5.
Fold sauce into the pasta/cauliflower mixture. Fold in scallions and pepper.
6.
Serve with green salad.
