Definitive Honey Cake

Celebrate a sweet new year with some really good honey cake. L'shana Tova!

cups all-purpose flour

tbsp baking powder

tsp baking soda

tsp salt

tsp cloves
1/2
tsp allspice
1
cup vegetable oil
1
cup honey
1 1/2
cups granulated sugar
1/2
cup packed brown sugar

eggs
1
tsp vanilla extract
1
cup warm coffee
1/2
cup orange juice
1/2
cup shredded, peeled apples (optional
1/2
cup sliced almonds (optional
Directions
1.
Preheat oven to 350 degrees. Generously spray a 9- or 10-inch bundt or angel food cake pan with nonstick cooking spray.

In a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, cloves, and allspice.

Make a well in the center and stir in the oil, honey, both sugars, eggs, vanilla, coffee, and orange juice.
4.
Using a strong wire whisk or an electric mixer on low speed, mix the ingredients until thoroughly combined, making sure that the dry ingredients are not stuck at the bottom of the bowl. The batter should be slightly thick.
5.
Fold in shredded apples, if you are using those.
6.
Pour batter into prepared pan. Sprinkle with sliced almonds, if desired.
7.
Bake 60-75 minutes, or until cake springs back when gently pressed with your fingertips.
8.
Cool for 10 minutes, then remove from cake pan and put on a serving plate.
