Lamb Shanks

This is a good Passover recipe, but can be made for any occasion.

Ingredients
4
lamb shanks, about 3 lbs
1
large, finely chopped onion
1
clove of garlic, minced
1
tbsp lemon juice
1
tsp salt
1
bay leaf
1 1/4
cups water
1
tbsp potato starch
Directions
1.
Brown the lamb in a heavy pan or skillet.
2.
Push lamb to one side of the dish and add onion and garlic. Saute until soft.
3.
Stir in lemon juice, salt, bay leaf, and 1 cup of water.
4.
Cover and simmer for 3 hours, or until very tender,
5.
Remover meat and tent with foil.
6.
Blend potato starch with remaining water. Stir into pan liquid.
7.
Cook, stirring constantly, until gravy thickens and boils for 1 minute.
8.
Remove bay leaf and serve.
