Aunt Lorraine's Irish Soda Bread

The tastiest addition to St. Patty's Day!

Ingredients

CUP all purpose flour
1/4
CUP sugar
1
TBS baking soda
1
TSP Baking Powder
1/2
TSP salt
4
TBS unsalted butter (1/4 cup) cut into pieces
2
TBS caraway seeds
1
CUP golden raisins
1
CUP buttermilk
1
large egg
Directions
1.
Set rack in middle level of oven and preheat to 400o.
2.
In a mixing bowl combine the flour, sugar, baking soda, baking powder and salt. Mix with whisk to combine well
3.
Add butter and rub in as for pastry until butter disappears into the dry ingredients.

Stir in caraway seeds and raisins into the flour.
5.
In a small bowl, whisk the buttermilk and egg together and mix into the dough mixture with a rubber spatula or wooden spoon. Mix until combined.

Turn out the dough onto a floured work surface and fold it over on itself several times shaping into a round loaf. Transfer the loaf on to a cookie sheet (I use a disposable 8 of 9" round aluminum cake pan) covered with parchment or foil. Cut a cross on the top. Bake @400o 15 minutes then turn the oven down to 350o and bake for 15-20 minutes more until well colored and a toothpick comes out clean. (I usually take the bread out of the pan and place it directly on the oven rack for 5 minutes.

Remove from oven and cool on a rack. Serve with Sweet Irish Butter and Marmalade.

Yield: One Large Loaf
