Classic Lamb Chops With Potatoes

Another Passover favorite.

Ingredients

rib or shoulder lamb chops
1
lb onions, sliced thin
2
lb red potatoes, sliced thin
1
bay leaf'1 tsp. thyme
13 3/4
chicken broth
3
tbsp butter
2
cloves garlic, crushed
salt and pepper to taste
Directions
1.
Rub lamb chops with garlic, salt, and pepper.
2.
Heat butter in frying pan or skillet.
3.
Brown chops on both sides (about 2 minutes per side).
4.
Sprinkle onions over chops. Add thyme and bay leaf. Scatter potatoes on top. Sprinkle with salt and pepper to taste.
5.
Pour broth over top and bring to a boil. Cover tightly, reduce heat, and simmer 40-45 minutes, or until meat is tender and potatoes are soft. Thicken juices with flour if desired.
