Strawberry Salad

A French friend recently served this at brunch, and I immediately wanted the recipe. It's a touch sweet but very refreshing. Enjoy it year-round by replacing the strawberries with apple slices.

Ingredients
1
cup small strawberries, trimmed and halved
1
tbsp aged balsamic vinegar
1
tbsp extra-virgin olive oil
1
tbsp finely grated lemon zest (about 1 lemon)
1/2
tsp table salt
1/4
tsp freshly ground pepper
1
bunch romaine lettuce (washed, tough ends removed, coarsely cut)
2
tsp fresh chives, minced
6
oz (1 cup) cherry tomatoes, halved
Directions
1.
In salad bowl combine lettuce, strawberries, lemon zest, chives, and cherry tomatoes.
2.
In a medium bowl, whisk together the oil, vinegar, salt, pepper, and lemon zest. Pour over the salad toss to coat. Chill briefly and serve.
