Breakfast Burritos

This is the perfect breakfast (or lunch! or dinner!) in a pinch and can be modified countless ways depending on what's in the fridge. Get creative, it's hard to ruin eggs in a warm tortilla.

Ingredients
per person
2
eggs, cracked and stirred with a fork
veggies to be cooked (diced
mushrooms
onions
green or red peppers
fresh veggies
spinach
tomato
avocado
meat
i prefer using leftover ham or bacon, but crumbled sausage works too
any shredded cheese
cheddar
mexican cheese blend
swiss
havarti
1
tortilla (warmed in microwave
1
tsp cooking oil
salt & pepper to taste
salsa & sour cream if desired
Directions
1.
Open your fridge and take a good look-grab anything that looks like it would taste good in a tortilla
2.
Wash & dice up any vegetables you would like cooked
3.
Set the stove to low and put diced veggies in frying pan with a little oil to begin cooking the vegetables. Add a little salt and pepper…just because.
4.
After the veggies cook for a minute or 2, crack eggs into a cup and give them a good scramble with a fork, toss them in with the cooking veggies. Sprinkle on a good amount of salt & pepper
5.
Scramble the egg by scraping at edges of the pan as the egg cooks until there is no more runny egg goo. Turn off the burner. Sprinkle cheese over warm eggs.
6.
Warm tortilla in the microwave for 10 seconds and put on plate, scoop egg/veggies/cheese onto warm tortilla
7.
Now go crazy, add any cold veggies or toppings that your heart desire (don't forget the avocado), then wrap that bad boy up!
