Pork Chop Spanish Rice

Ingredients

pork chops, 1/2 inch thick

tbls shortening
1
tsp salt
1/2
tsp chili powder
1
dash pepper
3/4
cup uncooked long-grain rice
1/2
cup chopped onion
1/4
cup chopped green pepper
1
1-pound 12 ounce can tomatoes (3 1/2 cups)
5
green pepper rings
2
oz shredded american cheese (1/2 cup)
Directions
1.
Trim excess fat from chops.
2.
Slowly brown chops in melted shortening about 15 - 20 minutes; drain off excess fat.
3.
Combine salt, chili powder, and pepper; sprinkle over meat.
4.
Add rice, onion, and chopped green pepper. Pour tomatoes over.
5.
Cover and cook over low heat 35 minutes, stirring occasionally.
6.
Add green pepper rings and cook 5 minutes longer or till rice and meat are tender.
7.
Sprinkle with cheese.
