Mary's Flank Steak

I serve this with garlic smashed potatoes and sauteed or grilled asparagus. It’s a family favorite! Love, Mary Parsons

Ingredients
1
large lemon (juiced)
as much soy sauce and olive as there is lemon juice – three equal parts lemon juice, soy sauce and olive oil
pepper to taste
1/2
tsp dried thyme
1
large smashed garlic clove
1
sliced large onion
1
flank steak (large)
Directions
1.
Mix all ingredients together in a gallon size Ziploc bag (except for the flank steak).

Score the steak on both sides, make cuts about ¼ of an inch – this helps with the marinade and keeps the steak from curling up when broiling.
3.
Let steak marinade for at least 1 hour, no more than 2 hours at room temperature. If marinating all day put in refrigerator.
4.
Place the steak in a broiling pan and surround with the onions and marinade. Broil on high to your desired doneness. You may need to cook onions a little longer if you like your steak rare. After the steak is cooked let it sit for about 5 min and then slice it on an angle and against the grain of the meat.
5.
After sliced top with the onions and cooked marinade.
