Chili Tortellini

Chili recipe combined with cheesy tortellini

Ingredients

lb dry tortellini (or refrigerated version
2
tbsp extra virgin olive oil
1
cup finely chopped onion
2
tbsp fresh minced garlic
1
lb lean ground beef
1/2
tsp kosher salt
1/4
tsp freshly ground black pepper
1/4
tsp garlic salt
32
reduced sodium chicken broth
2
cans (15 oz) beans, i used chili and kidney beans
15
cans Rotel diced tomatoes MILD version
2
tbsp ground cumin
1 1/2
tbsp chili powder
1/2
cup fresh chopped cilantro
Directions
1.
Cook tortellini according to package directions.
2.
Heat olive oil into a large dutch oven over medium heat.
3.
Saute onion and garlic for about 5 minutes then brown beef until browned. Drain if necessary.
4.
Add broth, tomatoes, beans, cumin, chili powder and cilantro.
5.
Add cooked tortellini and heat for 10 minutes or until hot. Reduce heat to a low simmer until ready to serve.
