Ridiculously Yummy Italian Sausage Soup From Aunt Amy

Ingredients
1
1/2lbs mild italian sausage cut into 1/2" pieces
2
clove garlic, minced or pressed
2
large onions chopped
1
can 28oz Italian style tomatoes
3
can 14.5oz regular beef broth
1 1/2
cup dry red wine
1/2
tsp dry basil
3
tbs chopped parsley
1
med green pepper seeded and chopped
2
med zucchini cut into 1/2" slices
5
oz med bow tie pasta
grated parm cheese
Directions
1.
in a 5 quart Dutch oven over med heat cook sausage slices until lightly browned on the outside and no longer pink on the inside
2.
remove from pot with slotted spoon drain on paper towel and set aside. spoon off grease, keep 3 Tbsp grease.
3.
add garlic, onions, and cook stirring occasionally until onions are soft @5 min
4.
stir in tomatoes (break up) and their liquids, then add sausage, beef broth, wine and basil
5.
bring to a full rolling boil cover reduce heat and simmer for 20 min
6.
stir in parsley, green peppers, zucchini and cook @ 10-15 min
7.
skim off fat and discard
8.
cook noodles separately and add when serving
9.
pass cheese at the table
