Joanne Sencindiver's Butterscotch Coffee Cake

Moist and flavorful with a delicious crumb topping. If you bring this anywhere you will be the hit of the party!

Ingredients

box yellow cake mix with pudding in the mix

small box instant vanilla pudding mix (dry)
1
small box instant butterscotch pudding mix (dry)

cup canola oil
1
cup water

eggs
crumb topping
1 1/2
cup sifted all-purpose flour
1
cup packed light brown sugar
1/2
cup white sugar
2
tbs cinnamon
1 1/2
stick cold margarine, sliced
Directions
1.
Pre-heat oven to 350 degrees.
2.
Spray 9" x13" baking pan with Baking Pam.
3.
To make cake, using a counter-top or handheld mixer, mix all cake ingredients together until very well blended. Mix approx. 3-5 minutes. Color should be light in color and batter should be fluffy and thick.
4.
Pour into a 9" x 13" baking pan that has been sprayed with Baking Pam. Even out batter so that it is flat in pan.

To make crumbs, sift flour into a bowl. Add sugars and cinnamon. Add cold, cut margarine. Using your hands, mix crumbs until crumbly. Do not over process the crumbs into a paste. Should be powdery and crumbly.
6.
Sprinkle crumbs evenly over top of cake covering the whole thing.
7.
Place in oven and bake 45 minutes or until toothpick inserted into cake comes out dry.
