Mary Beth's Mandarin Salad

Great for summer barbecue!

Ingredients
1
. clean and drain
1/2
head boston lettuce
1/2
head romaine
1/2
cup chopped celery
2
scallions - chopped
1
can mandarin oranges - drained
2
. caramelized almonds
1/4
cup almonds, sliced
1
tbs & 1 tsp. sugar
3
. vinaigrette
1/4
cup oil (I use canola)
2
tbs sugar
2
tbs white vinegar
1
tsp parsley
1/2
tsp salt
black pepper
tobasco (4-5 shakes)
Directions
1.
Put almonds and sugar in heavy saucepan over medium heat, stir constantly until sugar disolves and almonds are lightly browned. Pour onto a plate. Once cooled, put in plastic bag and break up into small pieces.
2.
Dressing can be made the night before and chilled. Toss before serving (I layer mandarins, then scallions, then almonds for appearance)
