Emily's Irish Skillet

Great for a quick, hearty weeknight dinner. Tangy and savory. Still great as leftovers, too!

Ingredients
1
cup beef broth (but I use a lager instead)
1/4
cup apple juice
2
tbs white vinegar
2
tbs yellow mustard
1
tbs Worcestershire sauce
1
tsp salt
1
tsp coarse ground black pepper
1
lb lean ground beef
1/2
cup fresh diced onion
2
tbs vegetable oil
1
lb Ore Ida Potatoes O'Brien (if you can find them use hash browns and add in diced bell pepper)
4
cup shredded green cabbage
4
slices cooked, crumbled bacon (our family likes a whole pound of bacon)
Directions
1.
In a small mixing bowl, combine the beef broth, apple juice, vinegar, mustard, Worcestershire sauce, salt, and pepper. Whisk to blend and set aside.
2.
In large iron skillet, brown the ground beef with the diced onion. Drain any excess grease.
3.
Add the vegetable oil and potatoes to the beef and onions.
4.
Cook over medium heat for about 10 minutes or until the potatoes are lightly browned, stirring frequently to prevent sticking.
5.
Add the liquid mixture, the shredded cabbage and bacon.
6.
Cook another 5-10 minutes over medium heat until most of the liquid is absorbed.
7.
Serve immediately while hot (with some Irish soda bread!)
