Spicy Peanut Dip

A family favorite with crudites, but great served with almost anything! One of the things we like to make and stash in the fridge for future snacking pleasure!

Ingredients
1
tsp vegetable oil
1
large shallot
1
tbs fresh ginger, minced
1
tsp curry powder
1/8
tsp dried crushed red pepper
1
cup low sodium chicken broth
1/2
cup creamy peanut butter (I used chunky sometimes, too)
4
tsp fresh lime juice
1
tbs soy sauce
1
tsp brown sugar
Directions
1.
Heat oil in medium skillet. Saute shallot, garlic, and ginger (3 minutes).

Add curry powder and red pepper (15 seconds).
3.
Stir in broth, peanut butter, lime juice, soy sauce, and brown sugar. Whisk to blend.
4.
Simmer until it thickens, whisking constantly (3 minutes).
5.
Season with salt and pepper.
6.
Transfer to bowl and chill 2+ hours.
7.
Serve cold or at room temperature.

*can be made up to 2 days ahead*
