Nana's Butternut Squash Soup

A great winter soup. Easy thing to do is to buy the squash already peeled at the super-market. If not, microwave, whole squash 4mins, then peel.

Ingredients

lbs of Butternut Squash, peeled
1
onion, 1 carrot, 1 stalk of celery
2
tbs butter
5
cups of chicken stock
1 1/2
cups of light cream
Directions
1.
2 lbs. of Butternut Squash, chop to 1/2" cubes
2.
1 onion, 1 carrot, 1 stalk of celery-all chopped small
3.
2 Tbsp. butter, melted in a 4 quart sauce pan, until wilted
4.
5 Cups of chicken stock
5.
Add squash and stir, bringing to a boil
6.
Cover and reduce heat, simmer 40 mins., until tender
7.
Puree all ingredients
8.
Add 1 1/2 Cups of light cream
9.
Reheat and salt to taste
10.
Enjoy!
